Take part of what's owed now, and keep the invoice open for whoever pays the rest later.

Build the sale and continue to payment.
Choose a method and enter less than the full amount.
Click Continue.
Confirm Save invoice as unpaid? if the rest will come later. You can also use Save invoice & send paylink.
The invoice stays part paid. Open it later to take the remainder. The option can be switched off with Take Partial Payment in your Payment Policy.
